Deb's Side Dish Delight

  • 2 to 2-1/2 lbs. smoked polish sausage

  • 1 jar (16 oz.) Deb's Delights Chow-Chow

 

 Slice polish sausage into desired size link pieces.  Add Deb's Delights Chow-Chow and simmer on low in crock-pot for 2-3 hours.  What an easy treat!

 

 

Peachy-Chicken Quesadillas

 Chicken Ingredients & Preparation:

 

  •  1 lb. skinless chicken breasts cut in strips

  • 2 oz. Deb's Delights Peach Jam

  • 2 oz. Deb's Delights Chipotle BBQ Sauce

  • 2 Deb's Delights gourmet crushed garlic cloves

  • 1 oz. golden tequila

  • 1 oz. corn oil

  • 1/2 tsp. salt & fresh ground black pepper

 

 In gallon size plastic storage bag combine liquids, spices and crushed garlic.  Add chicken strips and marinate for up to 2 hrs. at room temperature or overnight in the refrigerator.  Pan fry or char-grill chicken strips. 

 

 Tortilla Ingredients & Preparation:

 

  •  8 (8") flour tortillas

  • 4 oz. Deb's Delights Salsa (Mild or XXX)

  • 2 oz. Deb's Delights Peach Jam

  • 2/3 cup shredded Monterey Jack cheese

  • 1/4 cup finely chopped green onion

  • 1 cup sour cream

 

 Combined cooked chicken, salsa and jam in a bowl.  Divide chicken mixture, cheese and green onions evenly among (4) tortillas & top with remaining (4) tortillas.  Heat (1) tortilla stack in large skillet over medium heat for 2-3 minutes.  Turn tortilla over and repeat for another 2-3 minutes or until cheese is melted. Repeat with remaining (3) tortilla stacks. Serve with sour cream.

 

 

Deb's Delights Chicken Margarite

 Chicken Ingredients & Preparation:

 

  •  4 boneless chicken breast halves, skinned

  • 2 oz. Marmalade Jam

  • 1 oz. golden tequila

  • 1 oz. corn oil

  • 1 cup tortilla chips, finely crushed

  • 2 tbsp. cilantro, chopped

  • 1/3 cup Jack cheese, grated

 

 Marinate chicken with a mixture of the oil, lime marmalade and tequila at least 1 hour.  Roll chicken in the tortilla crumbs and cilantro mixture to coat.  Place in baking dish & bake for 25 minutes at 350 degrees.

 

 Margarita Sauce Ingredients & Preparation: 

 

  • 2 oz. Lime Marmalade Jam

  • 4 oz. Deb's Delights Salsa (mild or XXX heat)

  • 1 oz. golden tequila

 

In large bowl, combine liquids.  Remove chicken from oven and pour on Margarita Sauce and top with cheese. Return to oven until cheese melts.  Accompany with Spanish rice and refried beans.

 

 

Pepper Jelly Pinwheels 

  • 1 - 8 oz. pkg. cream cheese (softened)

  • 1 pkg. round soft tortilla shells

  • 1 (8 oz.) jar of Deb's Jalapeno, Raspberry Jalapeno, Peach Pepper, Hot Cherry, Habanaro, or Christmas Pepper Jelly

 

 Spread some cream cheese on flat tortilla shell and then spread Deb's pepper jelly on top of cream cheese.  Roll shell into log. Repeat with other shells.  Wrap in aluminum foil and refrigerate until firm.  Cut into pinwheels and arrange on party platter. 

 

 ADDITIONAL TIPS:  Other uses for Deb's pepper jellies include using as a meat marinade for chicken or pork.  Just heat a small amount of jelly in microwave until melted and baste on meat before grilling.

 

 

Deb's Hot & Sweet Garlic Rice 

  • 1 - med. size onion, chopped

  • 1/2 sweet red pepper

  • 1 cup Habanaro Honi's  Hot & Sweet Pickled Garlic

  • 3 Tbsp. olive oil (or hot flavored olive oil)

  • 4 cups long grain rice

  • 1 Tbsp. parsley flakes (dried or fresh)

  • 1/4 tsp. ground red pepper

  • 1 Tbsp. chicken bouillon

  • 4 Tbsp. butter

  • 2 + 2/3 cups water

 

 Sauté onion, sweet red pepper and garlic in olive oil.  Add rice and lightly brown.  Add parsley flakes, ground red pepper and chicken bouillon to flavor.  Stir approx. 5 min.  When well mixed add butter and water.  Serves 6 to 8.

 

Southern Chow-Chow Bake

  • 1 pkg. dry pinto beans

  • 1 semi boneless ham

  • 1 tsp. salt

  • 1 jar (16 oz. pint) of Deb's Chow-Chow

  • brown sugar 

 

Soak  beans in water overnight then drain.  Put beans, salt and ham in baking dish. Bake in 350 oven about 3 hrs. or until beans are softened.  Carefully pull ham off the bone and mix in with beans. Stir in brown sugar for added taste.  Mix in Deb's Chow-Chow and serve with warm cornbread.  Enjoy!

 

ADDITIONAL TIPS:  Heat Deb's Chow-Chow in slow cooker or large sauté pan with polish sausage. Enjoy as a hot dog topping, or sausage topping, or just serve as a side with butter crackers.

 

 

Deb’s Pepper Jelly Cheesecake appetizer

 

  • 1 - 8 oz. pkg. cream cheese    

  • 5 1/2 oz. shredded cheddar cheese

  • 1 large or 2 small cloves of garlic

  • 1 - egg

  • 1 - 8 oz. jar of Deb's Raspberry Jalapeno, Jalapeno, Peach Pepper, Hot Cherry, Habanaro, or Christmas Pepper Jelly

 

Mix together the first 4 ingredient with 1/2 jar of the jelly.  Pour mixture into a greased 6" spring-form pan.  Bake at 350 for 35 min. or until top of cake is lightly brown.  Heat remaining jelly and pour over top of cheesecake.  Serve with your favorite crackers.

 

 

Grilled Hot & Sweet Jalapeno Mustard Chicken

  • Chicken breasts

  • Deb's Jalapeno Mustard

  • Fresh rosemary

  • Fresh sage

 

 Baste chicken with Deb's Hot & Sweet Jalapeno Mustard and sprinkle with fresh (or dried) herbs.  Grill about 25 min.

 

 ADDITIONAL TIPS:  Use Deb's mustard as a sandwich spread, a basting sauce with chicken, pork chops or steak, or just as a simple appetizer dip with pretzels.

 

 

Deb's Chili-Cocktail Meatballs

  • 1  - 8 oz. Deb's grape jam

  • 1 - 16 oz. (pint) of Deb's Chosen Chili Sauce (Mild, XX or XXX)

  • 1/4 cup lemon juice

  • 1 bag frozen pre-cooked cocktail meatballs

 

Add first 3 ingredients together and bring slowly to a boil.  Add meatballs and simmer in crock-pot until meatballs are heated through.  Serve as an appetizer.

 

ADDITIONAL TIPS:  Deb's Chosen Chili Sauce is ideal as a topping for hot dogs or included in your favorite meatloaf recipe.

 

 

Deb's Taco Bake

  • 2 - 8 oz. pkgs. of cream cheese (softened)

  • 2 lbs. ground chuck or beef (or for lower fat content,  use 2 lb.  ground turkey) 

  • 1 pkg. taco seasoning (mild or hot)

  • 1 - 16 oz. (pint) of Deb's Salsa (mild or XXX heat)

  • 2 cups shredded cheddar cheese

  • (optional) sliced jalapeno peppers

  • tortilla/taco chips

 

 Brown ground meat and drain fat.  Follow directions on taco seasoning package to add seasoning. Spread softened cream cheese on  bottom of a 9 x 13 baking dish and layer the cooked meat on top.  Spread salsa on top of meat and finally the shredded cheese.  Bake in 350 oven until cheese is melted.  Add sliced jalapeno peppers if desired.  Serve as a dip with taco chips.

 

ADDITIONAL TIPS:  Use Deb's Salsa plain or with melted cheese as a dip, include in your favorite meatloaf recipe, in tacos, in Mexican omelet's, or in spicy quiche.

 

 

Baked Brie with Kahlua Kream Coffee Jelly

 

  • 5 to 8 inch wheel of Brie Cheese

  • 1 (12" x 18") sheet of puff pastry

  • 1 egg, beaten

  • 1 jar Deb's Kahlua Kream Coffee Jelly

 

Using a warmed sharp knife cut the wheel of Brie in half horizontally and separate the top half of the wheel from the bottom half. Spread Kahlua Kream Coffee Jelly on the  bottom half. Replace the top half of the Brie and apply pressure to secure the jelly. Working on a well-floured surface, roll out the puff pastry so that it will fully cover the Brie. Place the Brie in the middle of the puff pastry and fold the excess pastry around the wheel.  Brush the entire top and sides of the Brie with the egg and place the Brie on a sheet pan lined with parchment paper. Bake for 20 to 30 minutes in 400 oven or until the pastry begins to turn golden brown, then turn the temperature down to 325 degrees F and bake for another 20 minutes.  Serve with crackers.

 ** A simpler version of this hors d'oeuvre may also be prepared by eliminating the pastry and just wrapping the wheel of Brie completely in foil and placing on a baking sheet.  Heat in 350 oven for approx. 20 min. until cheese is gooey.  Warm Kahlua Kream Coffee Jelly about 15 sec. in microwave and pour over top of the cheese.  Serve with crackers.

 

 ADDITIONAL TIPS:  For a new twist on something old, try spreading Kahlua Kream Coffee Jelly in between the layers of a 2 tier chocolate cake.  Top with Mocha flavored frosting.

 

 

Deb's BBQ Baked Beans

  • 1- 32 oz. can Grandma Browns Baked Beans

  • 1- 16 oz. can Campbell's beans

  • 1/3 cup brown sugar

  • 1 tsp. salt

  • 3/4 cup to 1 cup Deb's Chipotle BBQ Sauce (mild or XXX)

  • 6 to 8 strips of bacon

 

 Mix all ingredients together except bacon and pour into baking dish.  Lay bacon strips across the top and bake in 350 oven approx. 45-60 minutes until bubbly.

 

 ADDITIONAL TIPS:  Use Deb's Chipotle Sauce as you would any other BBQ Sauce - on chicken, ribs, and pork chops.  Use in your favorite meatloaf recipes or as a dipping sauce for French fries!

 

 

Cherry Almond Dessert

 

  • 2 pkgs. crescent rolls

  • 3/4 - 1 cup Deb's Delights Cherry Almond Jam

  • 1/4 cup slivered almonds

  • 1/2 tsp. almond extract

  • 1/4 cup sugar

  • 1 8 oz. pkg. cream cheese

  • 1/2 cup maraschino cherries

 

 Beat cream cheese, sugar and almond extract together.  Fold in Cherry Almond Jam and set aside.  In 12" square, ungreased  pan spread (1) crescent roll package and press together at seams.  Spread cream cheese mixture on crescent dough and then fold 2nd crescent roll pkg. on top, overlapping,  Bake in 375 degree oven for 25-30 min. Add glaze (recipe ingredients below) when dessert cools.  Top with maraschino cherries and slivered almonds.

 

 Glaze:

 

  • 1 cup confectioners sugar

  • 1-2 tbsp. milk

  • 1 tbsp. melted butter

 

 ADDITIONAL TIPS:  Try substituting a different Deb's fruit jam for a different dessert each time!  Deb's Cherry Almond Jam is also great as a topping on no-bake cheesecakes, or melted in a microwave slightly for a topping on vanilla ice-cream.
